On Feb. 6, , a group of notable guests were invited by Thomas Jefferson for dinner at the White House. One of them, Manasseh Cutler, a Federalist representative from Massachusetts, described the extensive menu offered: “Rice soup, round of beef, turkey, mutton, ham, loin of veal, cutlets of mutton or beef, fried eggs, fried beef.”

At some point during the dinner, however, a taste controversy ensued. Cutler was negatively impressed by “a pie called macaroni, which appeared to be a rich crust filled with the strillions of onions, or shallots, which I took it to be, tasted very strong, and not very agreeable.”

After a whispered murmuring with Meriwether Lewis, the secretary to the President who was about to become, with William Clark, the leader of the celebrated Corps of Discovery, the mystery was disclosed: “Mr Lewis told me there were none in it; it was an Italian dish, and what appeared like onions was made of flour and butter, with a particularly strong liquor mixed with them.”

Despite Cutler’s gastronomic dissatisfaction, by that time macaroni had become a habitual serving at the White House, a gastronomic innovation brought back from Europe by Jefferson.

Called to invigorate the diplomatic action of the young republic, and eventually to replace Benjamin Franklin as American ambassador in Paris, Jefferson had arrived in the French capital in Between official duties and Parisian pleasures, dinners at the house of Lafayette, preparation of long letters to keep his government informed of the situation in Europe, and lovely country strolls with his new acquaintance Maria Cosway, Jefferson was a very busy man indeed.

Nevertheless, he found time to escape from Paris on three different occasions to see something of France and other parts of Europe. In , he visited England; in the following year he traveled in France and Italy, and finally on to Holland and the Rhine region shortly before returning in Virginia.

Jefferson was not the typical 18th-century traveler: He found the Grand Tour unappealing. The journals he kept during his travels reveal a kind of puritanical distrust for any purely aesthetic enjoyments. Ignoring the usual tourist sites, it was in Italy especially that he satisfied his utilitarian attitude searching for different kinds of pleasures.

On April 10, , Jefferson crossed the Var River, France’s border with the Kingdom of Sardinia, and proceeded to Nice and northern Italy. During his stay of less than one month, it was not urban life that attracted him but the countryside with its precious agricultural crops: the rice fields outside Novara, the Nebbiolo wine of Piedmont, and the Parmesean cheese produced in the small village of Rozzano, near Milan.

But macaroni — the word used then as a general term for any kind of pasta — was the product that Jefferson studied, and liked, the most. Several items in the Jefferson Papers reveal the enthusiasm that the Virginian had for macaroni.

In Paris, Jefferson took note of a recipe for making the dish he called Nouilly macaroni. But a document even more interesting is a drawing that he very likely made in Genoa, of a macaroni machine, including detailed information concerning its production: “The best macaroni in Italy is made with a particular sort of flour called Semola, in Naples,” Jefferson wrote, “but in almost every shop a different sort of flour is commonly used; for, provided the flour be of a good quality, and not ground extremely fine, it will always do very well. A paste is made with flour, water and less yeast than is used for making bread.”

Back in Paris in the fall of , Jefferson commissioned his friend William Short, then visiting Naples, to purchase a machine for making macaroni. The machine arrived in Marseille, as the American consul there, Stephen Cathalan Jr., confirmed in a letter dated Aug. 2,

Jefferson, who was preparing his departure, suggested to Cathalan that he “send the Maccaroni machine you have received for me to William Short,” in the meanwhile appointed chargé d’affaires in Paris. The long awaited tool arrived, but only after Jefferson had left for the United States, and very likely was shipped to America later on.

We know nothing about its utilization at Monticello, but it is clear that macaroni became a must on the table of the third president of the United States. In her book “The Virginia Housewife” (), Mary Randolph (whose brother Thomas married Jefferson’s daughter Martha) provided a recipe for cooking macaroni, as it were, Monticello style: “Boil as much macaroni as will fill your dish, in milk and water, till quite tender; drain it on a sieve, sprinkle a little salt over it, put a layer in your dish, then cheese and butter, and bake it.”

The macaroni supplier for the White House was Giovanni Battista Sartori, who in the early 18th century had established a pasta factory in Trenton, New Jersey, believed to be the first of its kind in America.

So, was Jefferson the first to celebrate the wedding of macaroni and cheese — a dish that would later be a favorite of another president, Ronald Reagan? Probably not, but certainly he contributed in a significant way to putting pasta on American tables.

Macaroni and Parmesan cheese, along with Nebbiolo wine, were products that Jefferson appreciated throughout much of his life, and he often imported them from Italy.

Two letters show his prolonged preference for these Italian specialties. In late , Thomas Kuhn Jr., at that time American consul in Genoa, refers to a purchase of Nebbiolo wine — hundred bottles and 3 barrels — to be shipped to Monticello for a sum of more than 1, pounds. The second letter from Kuhn, sent shortly afterward, contained a request not only for “50 Lb. Naples Maccaroni,” but also “50 Lb. Bales de Genes,” the typical blue fabric produced in Genoa. But whether Thomas Jefferson also invented blue jeans is another story.

Sometimes we tend to make our meals so much more complicated than they need to be. I was blessed to be able to watch many women prepare their meals who learned to cook during the 30&#;s and 40&#;s. Some were busy stay at home moms. Others were moms who worked away from home and some were moms who helped their husbands on the farm.

These women used some tricks to prepare their meals that made meal preparation easier and faster. Here are a few of them:

    • They didn&#;t worry if they had homemade biscuits or muffins for every meal. Often for a daily meal they would just place a plate of bread (not always homemade bread, either) on the table to eat with butter and jam or honey. In some homes, this was a staple at every meal.

 

    • They would keep things cleaned and ready to use for a relish dish like carrot sticks, celery sticks, olives, pickles, sliced cucumbers, tomatoes or fresh cauliflower.

 

    • Hard boiled eggs or pickled beets were kept on hand to place in a bowl at the last minute.

 

    • They didn&#;t hesitate to open some canned fruit to pour into a bowl and set on the table to eat by itself without whipped cream or any added extras.

 

  • Canned vegetables were a life saver for many of them. Then they could just warm some canned peas to set on the table.

 

They served some combination of all of these at most meals. Then they would add a potato dish, rice or noodles and a meat and they would have dinner.

Sometimes we read cooking magazines and see very elaborate meals on TV and think if this isn&#;t the kind of food we make we must have failed as good cooks. Each dish doesn&#;t need five or more ingredients in it to make it good. That is probably one of the places where our diets started going down the tubes. We forgot to keep things simple.

You also save money when you keep it simple because you&#;re not using as many ingredients or extras like whipped cream or special spices.

Just like in the old days, your family will probably enjoy an icy cold canned peach just as much as a fresh organically grown peach you had to study to determine how ripe it was before you took it home to try to peel and slice it. It&#;s you, mom and dad, who make the meal special just by being together with the family, not the pedigree of your fruits and vegetables.

Yankee Noodles

From: Alice B. (I learned this recipe in junior high. It&#;s tasty, quick to cook, inexpensive, and dirties only one pan!)

1 lb. lean ground beef
8 oz. uncooked noodles
1/2 large onion, chopped
1 large can tomatoes
Salt and pepper (to taste)

Brown meat and onion. Drain off excess grease. Add noodles and canned tomatoes. Chop tomatoes a little bit while in the pan. Bring to a boil. Reduce temperature and simmer covered for 7 minutes. Stir. Cover and simmer 8 more minutes. That&#;s it!

You can add other ingredients you may have on hand like chopped green peppers, black olives, mushrooms, fresh herbs, etc. You may want to top with grated cheese. (Never cook the noodles first. They must cook with the rest of ingredients to absorb their flavors.)

I love, love, love recipes that take only one pan and this one really does! Often, people will call something a one dish meal but they end up using 3 pans, 2 mixing bowls and 1 casserole dish. (That&#;s the one dish, I guess.) Now you can see why I really appreciated your recipe. : )

Bottled Fruit Cake

CAKE USING BOTTLED FRUIT &#; (Sometimes we have an excess of home bottled fruit and need to use it up before it gets old. This is a great way to use it!)

1 quart of fruit with liquid
4 cups flour
4 tsp. soda
2 cups sugar
1 tsp. salt
2 tsp. cinnamon
1 tsp. cloves
1/4 tsp. nutmeg
1 cup oil
4 eggs
Raisins and nuts if desired

Blend all of the above ingredients at the same time. Bake at ° for 35 to 45 minutes. This makes one sheet cake or two cakes in 9&#;13 inch pans. This is a nice change from just using the fruit for a crisp, cobbler. or pie. You don&#;t need to put frosting on this, which can save time, too.
